This Tex Mex salad is ridiculously easy, packed with salad veggies and my kids love it. If you’re wondering what the red strips are in the photo above they’re beetroot. I bought a back of salad leaves (I know, super lazy) and that’s what was in it. Sometimes I serve the salad with salsa in place of a dressing.
What you need:
- Bag of tortilla chips (any flavour – up to you!)
- Tomatoes
- Cucumber
- Tin Sweetcorn, rinsed and drained.
- Lettuce
- Tin kidney beans, rinsed and drained.
- Cheese, grated.
What to do:
Crush your tortilla chips and pour them in a bowl. Chop up your tomatoes. lettuce and cucumber and throw them into the bowl with the remaining ingredients. Give it a good mix. That’s it! Told you it was easy.






Add coriander and it's a date.

Hrm. There are no peppers! It's not really Tex-Mex unless you have peppers. It's beautiful looking salad and it sounds yummy!
The beauty with this salad is you can throw anything in to it. Peppers sound great though, will remember that next time I make it.
