Italian Style Cheese Toastie

Today I was making filo parcels for dinner but the pastry and I did not get on.  So I had to come up with a plan B.  And usually plan Bs are cheese sandwiches.

What you need:

  • Bread
  • Pesto
  • Fresh basil, chopped
  • Tomatoes, sliced
  • Mozzarella cheese, sliced
  • Parmesan cheese, grated
  • Salt & pepper

What to do:

Slice the bread to make a sandwich.

On one slice of bread spread a generous layer of pesto then add a sprinkling of basil, slices of tomato, mozzarella, a dusting of Parmesan and some seasoning to taste.

Top it with the other slice of bread and pop in the oven.  Bake for about 5 minutes on a medium heat.

Serve immediately.

    It IS tasty!! Made it last night…so many times when I've gotten on this blog, I've seen recipes that look really good. I've stated so a number of times, said that I was going to try them, one by one…but never did. Not any of them! (Haven't been able to buy as much non-essential food as I would like to for quite a while!) But I was *determined* the past couple of days to make at least ONE of your recipes at last!! And so I did, finally! =D

    Well…it's good. Really tasty, and satisfying. I'll make it again soon, probably today. (I want to eat it at a time when it is not late at night and I'm tired!) One very clear thought I had was, it's certainly not low-fat, what with the cheeses and pesto. In fact, I was unpleasantly surprised at how VERY oily – excessively so, I think – my pesto was when I opened the jar for this first time in making this. For that reason, as well as for the fact that pesto is such an intense and strong flavor, I wouldn't make it every day or even every other day. Nevertheless, it is quite pleasing to the palate – a real savory treat. :D

      Glad you liked it Charla. Yes, I would agree that it's definitely not a low fat meal but sometimes you just have to indulge ;-)

    Update – had it again last night, just as good as before. Really hit the spot, in fact! Wonderful combination of very fresh (tomato) with processed (good bread and sliced mozzarella and pesto) and semi-fresh (block of Parmesan). Left out the other fresh ingredient (basil) this time because I didn't feel like going outside for the leaves, LOL! A plus is that it feels very nutritious (not low-fat – but still good for you! We all need SOME fat, and this is high in protein). Thank you for this recipe.
